Dinner.......

Tonight we cooked, Jay and I cooked together.


First London broil, in the crock pot simmering all day in 1/2 cup BBQ sauce, 2 tblsp apple cider vinegar, 2 tblsp dijon mustard, and 6 oz of dark beer. Taken out, shredded, (while sauce was skimmed of fat and reduced).
Returned to the crock pot with the reduced sauce. To simmer for a few minutes.


Some homemade coleslaw to top the shredded beef.
Pioneer Woman's crashed potatoes


Stuffed tomato's with rice, ricotta cheese, and italian seasoning. Topped with some mozzarella and some more italian seasoning.

All plated up. It was a great meal!!

Day-um! That looks great!!! Funny, we did crock pot BBQ chicken w/ jalapeno coleslaw. And my mom and I were just discussing those crashed potatoes,too. Weird. My stepdad is making some variation of the same thing.

What the hell is in the water.

That's an amazing dinner! The London Broil is outstanding. So tender. I am loving the tomatoes and potatoes!! That's so sweet that you cooked together.
