Happy Cinco de Mayo!!

So for the kiddos school I had to make a Mexican dish for them to have today for Cinco de Mayo.

I thought and thought. I wanted something simple and easy to make. So I decided on Banana Quesadillas. I figured the kids were going to have plenty of chips, queso, salsa ect. (from the sign up sheets). That a desert would be good.

They really were yummy and easy to make.



Here are the ingredients.....
1 package of cream cheese
2 bananas
1/4 cup of powdered sugar.
8-10 tortillas


Mix the cream cheese, bananas, and powdered sugar together well. A mixer helps, but I did it with a fork. I softened the cream cheese in the microwave for about 30 seconds on medium heat.
Soften the tortillas in the microwave. Then spread the mixture onto half of a tortilla, fold in half.

Then put them in the frig to chill. (I did this overnight).

Take out and cut tortillas into 3rds. Sprinkle with some powdered sugar and serve.
The kiddos LOVED them.

Girl lets hope it works.. cause, I really need a J-O-B!

And I am lovin the recipe! I may try that for the hubs.. he eats alot of banana's to keep his sugars normal.. this would be a new spin!

That sounds yummy!! But didn't I say enough with the food posts?? I'm all full of Mexican food and margaritas and my mouth is watering for banana quesadillas!
