Homemade Spaghetti Sauce turned Baked Spaghetti....Crock-pot style

So last weekend jay decided that we should have homemade spaghetti sauce. So we decided to do it in the crock-pot and then add the spaghetti noodles and make a baked spaghetti. It wasn't your put it in the crock-pot and forget it kind of meal, but it was well worth it in the end.

Here are the Roma tomato's (3lbs) all cut up and in the crock-pot to simmer.


This is what they looked like after one hour. I had taken a large cooking fork and mashed them up a bit.



Here is what they looked like after two hours. it started to look more like actual spaghetti sauce.


Then I cut up a green pepper, red pepper, a large onion, and 2 cloves of garlic, and added them to the mixture. Along with some oregano, parsley, mushrooms, and a bit of Emeril's Italian Seasonings.


This is what it looked like with everything added.


Then I cooked the meat, half sausage, half ground beef with some more minced garlic and Emerils.


Started the pasta boiling.

After another hour and adding the meat I took 1/2 of it out of the crock-pot. Clearly there was WAY to much sauce. I froze it so that we could use it later.

Then I added the cooked spaghetti to the sauce and mixed it all up.

After about another 45 minutes I added some Parmesan, and Mozzarella on the top let it cook for about another 20 minutes and it was done.


We ate this for days. Jay loved it. The kids loved it. I loved it.
I wasn't an easy meal time wise, it was relatively not to labor intensive. It was REALLY good!

That looks so good! All of that simmering of the sauce must of made it real rich and flavorful. It's nice for all that work you have some leftovers.
